How to simultate Monitors?

I need to simulate the setup we have in our showcase studio.

There the computer has a grafic card feeding two monitors and a third monitor via usb grafic card.

I would like to tell my vm that it has 3 monitors with different resolutions, so that i can prepare window settings at home.
I would like to that have the 3 monitors as windows on my one screen.

Is this possible? And if so - how?
