This is one of the reasons that I still use vSS for Management and vMotion and iSCSI/NFS etc and just use vDS for production VM traffic.

Exactly. That's usually my preference as well. But it's harder in a 10GbE environment to segment the traffic like that because we usually only have 2-4 uplinks.
